Mini Funfetti Cake
All the fun of a funfetti cake, in a mini-me version! This little cake is perfect, whether you’re celebrating an occasion or crying alone on the couch!
Self-care is so very important nowadays, and what better way to tell yourself ‘I love you,’ than with a cake?! But wait, it gets better. The little addition of mayo (trust meee) gives it a moistness that will make you…well…moist.
Mini Funfetti Cake Recipe

Ingredients
FOR THE CAKE!
- ⅔ cup all purpose flour
- 1 tsp baking powder
- ¼ tsp kosher salt
- 4 Tbsp unsalted butter, softened
- ⅓ cup +1 tbsp white granulated sugar
- 1 egg white
- 1 tsp pure vanilla extract
- ⅓ cup whole milk
- 1 Tbsp mayonnaise (you read that correctly)
- 1½ Tbsp sprinkles
FOR THE FROSTING!
- 8 Tbsp butter, softened
- 1½ cups powdered sugar
- 1 Tbsp milk
- ½ tsp pure vanilla extract
Instructions
- Preheat oven to 350°.
- Whisk together flour, baking powder, and salt. Set aside.
- In a medium bowl, cream together the butter and sugar with a hand mixer until cute & fluffy, 2 minutes.
- Add egg white, vanilla, milk, and mayo, and whip that hoe for 1 minute.
- Switch to a wooden spoon and add the dry ingredients until just combined and smooth, do not over-mix.
- Stir in the sprinkles. Again, careful of over-mixing because sometimes these colors run.
- Grease a 1 quart Pyrex and dust it evenly with flour. Pour in batter and bake for 35-40 minutes, or until the middle is perked up all the way like a plump bosom. A toothpick inserted should come out clean.
- While the cake is baking, beat together frosting ingredients.
- Allow cake to cool completely before frosting. Garnish with all the sprinkles you want!
- GRAB THE POPPERS AND LET THE GOOD TIMES ROLL!!!
Notes
1.) Set up your ‘mis en place.’ This means do what the recipe tells you to do to the individual ingredients, measure them out, and then place them in separate little bowls/dishes/what-have-you. When it’s time to build the recipe, you have everything measured and ready to go. It makes the entire process so much easier and more enjoyable!
2.) Don’t be weirded out by the mayo. It makes the cake extra moist and you can’t taste it at all!
3.) The cake takes a while to cool completely. Keep the frosting in a cool place that’s not the fridge; if it gets too cold it will harden, too warm and it will run. Consider making the frosting after it’s cooled to keep it at the right temp!
