Biscuits and Gravy is classic American comfort breakfast. It’s so yummy, and filling, and stick-to-your-ribs good. It’s also pretty much always the same. I love adding Old Bay to gravies and thought this would be the perfect opportunity to spice up an old classic! I’m so glad I did because it did NOT disappoint!

Old Bay Biscuits and Gravy Recipe

Ingredients
  

  • 1 pound ground pork sausage (like Jimmy Dean's)
  • 1 Tbsp unsalted butter
  • 2 Tbsp flour
  • 2 cups whole milk
  • 1 Tbsp Old Bay Seasoning
  • kosher salt
  • black pepper
  • biscuits, fresh/refrigerated/frozen doesn't matter
  • cheese of your choice
  • eggs, prepared to your liking

Instructions
 

  • Prepare biscuits according to package. Try to time it so that the gravy (takes about 15-20 minutes to cook) and biscuits are done at the same time.
  • In a large pan over medium heat, brown breakfast sausage, but do NOT season yet!!!
  • Once sausage is browned, add butter to it.
  • Place milk in a microwave safe bowl or glass measuring cup and microwave for 2 minutes.
  • As soon as you press start on the microwave, sprinkle the flour over pork and cook for 2 minutes, stirring often. When the microwave goes off you know the 2 minutes are up!
  • Pour milk over pork and give it sultry stir. Add in Old Bay and cook until gravy has thickened, about 8-10 minutes.
  • Now is a good time to think about how you want to prepare your eggs and get that started.
  • When gravy is at the consistency you'd like, taste and adjust with salt, pepper, and maybe some more Old Bay!

THE BUILD!

  • Plate your hot, steamy biscuits.
  • Pour your Old Bay gravy on top of biscuits. It's best to moan as you do this for full flavor extraction.
  • Place slice of cheese, or sprinkle shredded cheese, on hot gravy.
  • Top with eggs to really get that cheese melting.
  • Enjoy this warming twist on a classic comfort breakfast!

Notes

JUST THE TIPS!
1.) Set up your ‘mis en place.’ This means do what the recipe tells you to do to the individual ingredients, measure them out, and then place them in separate little bowls/dishes/what-have-you. When it’s time to build the recipe, you have everything measured and ready to go. It makes the entire process so much easier and more enjoyable!
2.) Pillsbury makes frozen biscuits in a bag, which is amazing if it’s just you or you and someone else. I like this because it allows me to take out just a few biscuits at a time, rather than having to make them all at once and some going to waste.

CONSISTENCY!

FOR A THICKER GRAVY: add more flour, about a 1/2 Tbsp at a time. Mix well and give it some time to cook and thicken before adding more.

TO THIN OUT YOUR GRAVY: add a splash of milk at a time, mixing in between, until desired consistency is achieved.
