Quick-Pickled Veggies
Quick-pickled veggies add the perfect crunch and burst of acidity to any dish. Follow this easy recipe to make your next dish POP!

Quick Pickled Veggies Recipe
The best way to brighten a dish with a little crunch and some bright acidity!

Ingredients
- 1 cup halved cucumber slices (about 15)
OR
- 1 cup very thinly sliced red onion halves
- 3 Tbsp rice (or white wine) vinegar
- 2 Tbsp water
- 1 Tbsp sugar
- pinch kosher salt
Instructions
- Combine cucumber or red onion with all other ingredients in a small container (the tighter everything is together, the better). Shake well and set in fridge for several hours, up to several days. The longer it sits, the better it's going to taste! FACT.
- All the veg may not be submerged in liquid at first and that's ok. Even over this small amount of time, the molecules will break down and eventually it will all get covered! Science!
- Give it a shake every now and again.

OTHER THINGS TO PICKLE:
• Jalapeño
• Radish
• Strawberries (life changing in a salad)
• Purple Cabbage
• Slaw mix
Just make sure everything is thinly sliced and easily penetrable, i.e. maybe carrots aren’t the best choice.
