1 - 15.25 oz boxyellow cake mix(ignore other ingredients on box)
3eggs
2tspvanilla extract
½cupvegetable oil
1cupwhole milk
FOR THE WHIPPED FROSTING!
1 - 8 oz tubextra creamy whipped topping(like cool whip or a knock-off brand)
1 -3.4 oz pkgvanilla INSTANT pudding
½cupvanilla vodka (optional)(if not using vodka in frosting, change ½ cup heavy whipping cream to 1 cup)
½cupheavy whipping cream
FOR THE JELLO!
1 - 3 oz box strawberry jello
1 -3 oz boxberry blue jello
2 cupsboiling water, divided in 2
1cupcold water, divided in 2
1cupvanilla vodka, divided in 2
OPTIONAL TOPPINGS!
fresh fruit
red, white, and blue sprinkles
Instructions
FOR THE CAKE!
Preheat oven to 350℉ and spray your big, hard 9x13 baking dish with cooking spray.
In a medium bowl, add cake mix, eggs, vanilla extract, oil, and milk. Beat with hand mixer until well combined. Pour into greased dish.
Bake for 28-30 minutes, or until a toothpick inserted comes out clean.
Allow to cool for 15 minutes.
FOR THE WHIPPED FROSTING!
While the cake is baking, make your whipped frosting!In a medium bowl, dump in your whipped topping, instant pudding mix, ½ cup heavy cream, and ½ cup vanilla vodka (or 1 cup heavy cream if not using vodka).
Mix with hand mixer until completely blended. It's gonna be so fucking thick. Cover and set in fridge.
FOR THE JELLO!
Bring 2 cups of water to a boil (I find it easier to use 2 small pots and boil 1 cup of water in each).
In two separate bowls, add strawberry mix to one, and berry blue to the other
Add 1 cup boiling water to strawberry and 1 cup boiling water to berry blue. Mix well until powders are completely dissolved.
Next, add ½ cup cold water to each. Stir.
Finally, add ½ cup vodka to each and stir again.
THE BUILD!
Take a fork and poke cake (down to the bottom of the dish!) in about ½ inch increments from one side of baking dish to the other. I like to do my pokes on an angle so you should do that, too, cause you have to do everything I say.
Using a glass measuring cup or a big spoon, lightly pour jello shot mix in 6 long lines, just enough for the jello to reach the bottom of the dish, alternating between red and blue. You will not use all of the jello mix. You should not use all of the jello mix. It is possible to overdo it, so don't. Obviously, make actual jello shots with any extra.
Set in fridge, uncovered, for at least 4 hours, for jello to set.
When 4 hours are up, take cake out and frost with your boozy whipped topping.
Garnish with fresh fruit or sprinkles!
Oh, and cake must be kept in fridge because of jello and whipped frosting. Le duh.
Notes
Set up your ‘mise en place.’ This means do what the recipe tells you to do to the individual ingredients, measure them out, and then place them in separate little bowls/dishes/what-have-you. When it’s time to build the recipe, you have everything measured and ready to go.
