Pour milk into a microwave safe bowl. Microwave for 2 minutes.
Simultaneously, while milk is warming, add flour to butter and whisk for 2 minutes. When the microwave goes off, that's your timer!
Add milk to butter/flour and whisk until thickened, about 8-10 minutes.
Once sauce has thickened, pour in your poultry drippings. With a 5 pound bird, I dumped everything in. You can do a little at a time to control the flavor.
Then season to taste with salt and pepper. DASSIT!

JUST THE TIPS!1.) Set up your 'mis en place.' This means do what the recipe tells you to do to the individual ingredients, measure them out, and then place them in separate little bowls/dishes/what-have-you. When it's time to build the recipe, you have everything measured and ready to go. It makes the entire process so much easier and more enjoyable! 2.) Ideally, you would make this right before serving it. Then longer it sits, even off the heat, the thicker it's going to get!3.) You can use drippings from anything to make this. Otherwise, use the stock or bouillon of your choosing and add it in when you would normally add the drippings.
