Gently place eggs in a small pot filled with cold water. Make sure the eggs are completely submerged. Place on a burner over high heat. When water comes to a boil, start a timer for 10 minutes. After 10 minutes, remove your huevos from boiling water and plunge into an ice bath. Hold there until ready to peel.
While eggs are boiling, start chopping your herbs and scallion! Place all herbs and scallion in a medium mixing bowl along with Greek yogurt, lemon juice, and chickpeas. Stir until well combined.
By now the eggs should be done. It’s ok if they haven’t cooled all the way through. Give them a peel, chop them up, and add them to the mix. Stir to incorporate. Season to taste with garlic salt and pepper.
Allow to chill in the fridge for preferably an hour, but tbh it can be enjoyed immediately…chef’s choice!
