Herby Chickpea Salad Sammies

Ingredients
  

FOR THE CHICKPEA SALAD!

  • 2 hardboiled eggs
  • ¼ cup finely chopped parsley
  • ¼ cup finely chopped chive
  • ¼ cup thinly sliced scallion
  • 1 Tbsp finely chopped dill
  • ½ cup Greek yogurt (Fagé!)
  • 1 - 15 oz can chickpeas, drained and rinsed
  • 2 tsp fresh lemon juice
  • garlice salt
  • black pepper

FOR THE SAMMIES!

  • 4 slices hearty/grainy bread
  • red onion sliced paper thin
  • leafy lettuce

Instructions
 

  • Gently place eggs in a small pot filled with cold water. Make sure the eggs are completely submerged. Place on a burner over high heat. When water comes to a boil, start a timer for 10 minutes. After 10 minutes, remove your huevos from boiling water and plunge into an ice bath. Hold there until ready to peel.
  • While eggs are boiling, start chopping your herbs and scallion! Place all herbs and scallion in a medium mixing bowl along with Greek yogurt, lemon juice, and chickpeas. Stir until well combined.
  • By now the eggs should be done. It’s ok if they haven’t cooled all the way through. Give them a peel, chop them up, and add them to the mix. Stir to incorporate. Season to taste with garlic salt and pepper.
  • Allow to chill in the fridge for preferably an hour, but tbh it can be enjoyed immediately…chef’s choice!

CLIMAX!

  • Toast your bread, pile on the herby chickpea-y yumminess, top with onions & lettuce, and ENJOY! FUCK THAT'S GOOD!
