Quick Homemade Coleslaw Recipe

This is so easy to make and so goddam good that it just doesn't make sense to purchase pre-made anymore. Plus, who doesn't love to brag about shit being made from scratch?!

Ingredients
  

  • 1- 12 to 14 oz package coleslaw veg mix
  • ¾ cup mayo
  • 2 Tbsp white granulated sugar
  • Tbsp apple cider vinegar
  • tsp sweet pickle juice
  • tsp dill pickle juice
  • ¾ tsp celery seed
  • ¼ heaping tsp kosher salt
  • 1 to 2 sweet pickles, minced
  • black pepper, to taste

Instructions
 

  • In a medium bowl, combine all ingredients MINUS the packaged coleslaw veg mix.
  • Once dressing is well combined, add packaged coleslaw veg mix and toss well. Taste and adjust with salt & pepper, if needed. Set in fridge for at least 30 minutes, the longer the better!
  • This coleslaw is best served that next day. If doing so, before serving, give it all a big mix and taste to see if it needs anymore salt/pepper.
  • Ps - this is a MUST on my BBQ PULLED CHICKEN SANDWICH!!!

Notes

1.) These ingredients need to marry, so the longer it sits, the better it's going to taste. As with any combo of chilled/room temp ingredients (especially when adding salt), you need to let the dish rest for some time before you taste and adjust.
